This time of year, it’s hard to ignore the fact that everything around is is suddenly pumpkin-this and pumpkin-that. I thought it would be fun to try some pumpkin-y things over the next few weeks and report back on what’s worth it, and what’s worth skipping. So, this month be ready to see more than a few pumpkin recipes and fun stuff coming your way. Because I think it’s time to just turn off the news and go bake something in the kitchen, don’t you?
First up, Pumpkin Bread.
I found this cute little mix at Home Goods over the weekend and thought it would be fun to use for my first pumpkin recipe. I have never made pumpkin bread before, so this was all new to me.
The mixing is always the easy part, right? I whipped together three eggs, some vegetable oil, and one 15 oz. can of pumpkin. Then, I combined that with the two packages of mix. It had the consistency of applesauce, and it smelled like the inside of Hobby Lobby!
Then, I filled up a dozen muffin cups. The instructions called for it to be baked in pans, but since I don’t have those I went with the option of using muffin tins. It will probably be easier to eat that way anyway, right?
After cooking for 22 minutes, let me tell you, these came out amazing. I was so surprised! If you’re brainstorming seasonal foods to make, I would highly recommend trying out pumpkin bread!
