I don’t know about you but we get especially sluggish around here during the summer when it comes to cooking. Easy foods like salads, smoothies and sandwiches are usually our go-to, but in reading the new Pioneer Woman magazine (remember when I went to her store in Pawhuska earlier in the summer?) I came across some great-looking recipes I want to try, including the sausage and pepper sandwich, which is something I used to eat all the time but totally forgot about!
I’ll provide the recipe below, along with a few simple instructions. Normally when we cook meat we grill outside, but for this recipe you can just pop everything in the oven all at once! That’s one reason we wanted to make it – it’s upwards of one hundred degrees outside and I don’t feel like hanging around a hot grill right now, so the easier the steps the better.
2 bell peppers (red, yellow or orange) cut into large chunks
3 tablespoons olive oil
1 teaspoon salt (and pepper to tase)
4 Italian sausages
4-6 hoagie rolls
- Preheat the oven to 425. Spread the peppers and onions on a baking sheet. Drizzle with olive oil, salt and pepper, and toss.
- Put the sausages in and around the vegetables on the baking sheet.
- Bake until the sausages are cooked through and the vegetables are tender, 30-35 minutes.
- Slice the sausages and serve on rolls with the roasted vegetables.
My favorite part of this recipe is how easily customizable it is! You can add or take away ingredients depending how many guests you have, who likes (or doesn’t like) what, and of course, depending on your taste!
Tips: we cooked ours in 15 minute increments, flipping the sausages halfway through. I added mustard to my sandwich, and although I’m not sure if that really goes with it, it tasted delicious for whatever it’s worth 🙂
